There's no new music or new arrangement of the music for Cowboy Bebop. It's just mixed for 5.1 surround sound. The "Remix" thing is just a buzzword for marketing the release. Something better than just re-releasing it disguised as the same product or calling it "Cowboy Bebop in 5.1 Surround Sound." I would assume that the other titles are the same.

Yeah, one3rd is right. It's purely a marketing scheme. But it obviously works since they keep on doing it.
We're such suckers, aren't we?

I have X remix, and it just basically has 5 episodes per disc with 5.1 japanese and english audio, and slightly better picture quality. Trigun remix is basically the same thing, and the original opening animations for each ot the 26 episodes are all added on instead of using the 1st animation for all the episodes.

The audio in the Cowboy Bebop remixes are really well done and I bought it without hesitation. There is a really good audio commentary by Wendee Lee on one of the episodes. All of the extras from the original release are on the remixes, although the menus are in the style of the OP credits instead of Ed's computer.
The Eva Platinums have a bunch of new extras as well, but are missing the alternate languages from the original release. This is the most extensive of the remixes out there. The originals also have still frame profiles which are not on the remasters, so I'm hanging on to both versions.
I've considered buying the Trigun and X 5.1 mixes but am not as into either series and own the 2.0 versions. I've also considered buying the Gudnam R2 OVA remixes. The R1 of 0083 has a very weak 5.1 mix and a very poor video transfer. It's getting harder for me to justify re-buying DVDs in standard definition since I'm in the process of replacing my collection with HD versions. This isn't too hard (for now) with my live action collection but will be a nightmare once more anime titles are released in HD.

Well, if you're planning on replacing your anime with HD versions, I'll gladly take those original releases out of your hand...
