I was watching Iriya no Sora, UFO no Natsu episode four, and noticed during the eating contest that the gyouza shot hot grease into a spectator's eyes. My question: Is it common for this to happen when eating gyouza? Also, is it usually humorous when it happens?

Well, think of it like ravioli. It is possible if you bite half of a ravioli (with some vigor, of course) you COULD squeeze the filling out the back end, particularly if there were a break in the noodle somewhere.
So, I would guess that eating gyouza is a similar concept. It doesn't happen often, but it does happen and hence can be exagerated for comedic effect in a tv show, movie, or animated story.

I assume it would relate to any food-related injuries (that makes me laugh just saying that...food-related injuries...lol )
It's sort of in the same category as trying to eat a grapefruit with a spoon and squirting the juice into your eye

Nothing spurts out of gyouza when you eat it. At least it hasn't happened to me anyway. The sauce just drips out of the bottom of it when you bite it pretty much.

Just think of the gyouza shot as the asian version of the spit shot....a classic laugh when timed right for the gag effect.
