Which is ironic given how the first episode dealt with the MC being overworked at his Job before the zombie apocalypse.

The problem is more complicated than that. The people working on this show have been in the industry for a while now. They know what they were capable of before when they were working under a much larger studio, and now that they're on their own and have access to a fraction of the resources along with less experienced production management. That's not necessarily a bad thing, but it is in this case because they're making no effort to reign in ambition.
Yes, they're able to do great work. They're good animators. But a balance between ambition and feasibility must be met when they're in such a nascent position. It's harmful to them in the long run if they ignore it, and they have been.
Graduates fresh out of art school and university will be weary to work with them if their productions are delayed and they have a lack of staff. Production committees will be weary for the same reasons.

Very much all of this. Kevin from Sakugablog already made a pretty lengthy post about this back when the anime had just started, but most of the issues here seem to be a cause of Kawagoe and Kojima's sky-high ambitions rather than executive/comittee meddling, like usually is what causes these schedule problems. And from rumours circulating around, Bugfilms already has more than one project underway, when they can't even handle this one.

The irony in poking fun at OLM only to overwork the staff just like them... I get that history was bound to repeat itself but isn't this a little too soon?
And on a side note, while making this post I noticed, the section with the abridged rules says "Teh Rules" at the top. Has it always been like that?
