The one soundtrack I keep going back to is the Turn A Gundam OST. It's by Yoko Kanno and has very mellow songs, very operatic, and some tear jerkers. The music really added to the anime. It really stood out.

Cowboy Bebop, and Death Note have amazing OSTs, i also really liked the sound track for FLCL
